Here it is cooked!
Grass fed lamb top sirloin end cap steak. I scored the precious fat on top and tucked in a finally chopped paste of organic rosemary, thyme, and oregano picked three minutes ago in the garden. I finished it with alder smoked sea salt, and a dusting of turmeric on the bottom. Tucking the spices into the thin scoring cuts you can put a lot more herbs on the meat, which increases the amount of polyphenols you eat. It also prevents the herbs from burning. Scoring the fat allows the fat to baste the meat, and it increases your body's ability to absorb the fat soluble compounds in the herbs. The lamb itself was ethically raised by our friend Judy 1 mile from the house on only grass.
