1) Beat 125g unsalted butter and 60g golden caster sugar in a bowl until combined. Beat again after adding 125g plain flour, 60g rice flour and a pinch of salt until dough forms.
2) Tip dough into greased tray lined with nonstick baking paper. Press down evenly with the back of a metal spoon. Prick all over with a fork. Chill in fridge for 1 hour. Pop in oven for 30 minutes at gas 4, 180c, fan 160c.
3) Make caramel by heating 200g caster sugar over medium-high heat. Swirl to get an even melt and remove once it's a rich caramel colour. Add 175ml double cream and 100g light muscovado sugar.

4) Simmer over low heat for 7 minutes, until smooth, thick and golden. Cool for 20 minutes. Pour over shortbread and chill until firm, about 2 hours.
5) Melt 200g white chocolate in a bowl over simmering water. Divide between 4 bowls, adding drops of pink, blue, yellow and green colouring to each, respectively. Stir in. Melt 200g dark chocolate. When the chocolate has cooled slightly, pour evenly over caramel.
6) Dot teaspoons of the 4 coloured white chocolates over dark chocolate surface. Use a skewer to swirl colours. Top with white chocolate stars. Chill for 5 hours to firm up. Enjoy!
