Stir frequently until chicken is almost cooked through - around 6-7 minutes. --- Next add in the rice and carrots. Cook another minute then add 1 tablespoon of the coconut aminos, 1 tablespoon of rice vinegar, and 1 tablespoon of esame oil. Stir everything together for about 1 minute --- Next add the scrambled eggs and the green sections of the scallions to the skillet.
