I'd like to thank Christine @conscious_cooking for letting me know about the #MyHolidayTradish giveaway by @Whole Foods Market. I do about 90% of my grocery shopping at @wholefoodsnyc and I'm very excited about entering this! ??
I'd like to share my favorite childhood dish - semolina porridge. It's a Russian classic that traditionally isn't vegan, so I used coconut milk in place of regular milk and it came out really delicious. Here's the recipe if you'd like to try it:

Ingredients:
1/3 cup semolina
1/2 cup coconut milk
1 cup water
1/4 tsp salt
1/2 tbsp raw sugar
Grated coconut, apple, raspberries and pomegranate seeds for garnishing

Instructions:
1. Combine coconut milk water and sugar (or stevia) in a medium saucepan. Bring to a boil.
2. Gradually add semolina. Stir continuously over medium heat for 2 minutes.
3. Garnish with grated coconut, apple, raspberries and pomegranate seeds.
