Mmm spelt banana nut breakfast muffins. Thanks for the Inspo @sophiesblend
200g wholemeal spelt flour
1tsp baking powder
Pinch sea salt
1tsp cinnamon
50g sultanas
2 ripe bananas
2 eggs
100ml almond milk
4tbsp raw honey or maple syrup
2tbsp coconut oil, melted
12 walnuts, for topping
50g rolled oats
Combine all the dry ingredients in a large bowl, then in a smaller bowl whisk the eggs with the honey, 1 mashed banana, milk and coconut oil. Pour the wet in to the dry and whisk... You want a thick muffin consistency! divide evenly in to a greased silicone muffin case and top each with a walnut, oats and a banana slice. Bake in a preheated oven at 180 degrees for 25 minutes, leave to cool and enjoy! ??☕️
