In a shallow dish, add balsamic, olive oil, Italian zest, and pink s+p. Whisk together to combine, then add chicken with slit side facing down. Cover and let marinade in refrigerator for at least 30 minutes, preferably 2 hours, flipping chicken over halfway through. - Remove chicken from refrigerator and let come to room temperature. Meanwhile, preheat oven to 400F degrees. When oven is ready, cover chicken with foil and bake about 15 minutes. Remove foil, and bake another 5 minutes or until internal temp is 180F. - For the Salad: In large bowl, whisk together olive oil, balsamic, Italian zest and pink s+p. Add in spring greens, olives, sundried tomatoes, onions and toss to coat. - Plate salad greens in a serving bowl and crumble feta over top. Slice chicken breast and top greens with chicken. Enjoy!
