Once a while I stumble upon this apple pudding in those little no-name bakeries known just to the local people. It's leftover sweet bread soaked in custard and baked with generous layer of cinnamon apples on the top. It's not delicate or fluffy, rather dense like slack baked cake, a little bit fudgy. You couldn't have a lot in one time, but having a slice once a while is such a treat. We've found it in North Bend in tiny bakery located two doors away from Twin Peaks diner that serves best damn coffee and cherry pie. Go there if you'll be visiting that area. It smelled beautiful there, pastries and pies looked great, cookies tasted awesome. "So what's inside, what bread do you put in? Brioche? I asked this nice man behind the counter. "Nope, mam. We make this pudding with donuts" That made so much sense ? ??#northbend #luscious #breadpudding
