Lots of fun today as we made a banoffee #paella here @dominiqueansellondon. One of the things that intrigued me the most about #London is the mix of cultures. The large paella surface allows us to caramelized the bananas (Our secret? A little bit of passionfruit in the caramel, which make the bananas taste more floral and riper). Then we build the banoffee pie in reverse the crust on top so it doesn't get soggy and stays extra crumbly. Our focus was keeping it simple, but really paying attention to textures.
