Chef @danielhumm: All of the cheeses served here are made on the farm at Le Castelas with their own goats milk; some served fresh and others aged. Local dried herbs, juniper and ash are used to flavor the cheese and the results are incredible and the aroma, intoxicating. Another reason this place inspires me in the kitchen. #makeitnice
