• 4 ears of corn — lightly oiled, salted and grilled until well colored • 2 c sugar snap peas and 2 c green beans, blanched for 30 seconds and roughly chopped • 1 c freshly shelled peas blanched for 15 seconds • 1 red pepper roughly chopped, 2 c cherry tomatoes cut in half • Toss with 1 tsp Dijon, 1 tblsp lemon juice, I tblsp white wine vinegar, 4 tblsp olive oil • Salt and pepper to taste • Enjoy!
