Pao de Lo, that super soft Portuguese sponge cake the Castella was based off of. It comes to the table @tabernamercado still wrapped in the parchment that it was baked in, drizzled with olive oil and sprinkled coarse salt. The texture is incredibly moist and cloud soft. #London
