Lemon Blueberry French Toast

Serves: 4
Ingredients
French toast:
2 eggs
½ cup skim milk (or almond milk)
¼ cup freshly squeezed lemon juice
2 tablespoons sugar of your choice or natural sweetener.
2 teaspoons pure vanilla extract
4 slices thick bread (or your bread of choice), halved into triangles
Blueberry Syrup:
1 cup frozen blueberries (or fresh)
1 tablespoon granulated sugar or natural sweetener
2 teaspoons freshly squeezed lemon juice
2 tablespoons water
½ teaspoon cornflour/cornstarch
1 tablespoon (extra) water
Instructions
French Toasts:
Whisk the eggs together with the milk, lemon juice, sugar and vanilla extract in a shallow bowl. Soak the bread in the egg mixture, pressing down on each side to ensure it has absorbed the liquid.
Heat a nonstick pan/griddle on medium heat. Fry the bread on both sides until golden and cooked through. While French Toasts are frying, prepare the Blueberry Syrup.
Blueberry Syrup:
Combine the blueberries, sugar, lemon juice and water in a small-sized saucepan over medium-high heat. Bring to a boil; lower heat and gently simmer.
Combine the cornstarch with the extra water until cornflour has dissolved and stir it into the blueberries. Continue to simmer while stirring occasionally, until the sauce begins to thicken.
Serve the French Toasts with the Blueberry Syrup and (optional) icing sugar.
