I always inspect our Madeleine's here at #DominiqueAnselBakery. And if any of you have waited in line, you've had a taste. A perfect #Madeleine is baked fast and furious so that there's that high hump that puffs up. And traditionally, it is served with this hump side up like a pearl in a shell. Freshly baked, when you bite into it, it should let out a little puff of steam, like a last breath.
