What can be better than a lazy weekend morning? Stay in your pj's, read a book, eat your favorite snacks and just relax... And here's a recipe for the most delicious granola bar I've ever tried. Enjoy!

Vegan Chocolate Chip Granola Bar Recipe
Ingredients:
Vegetable oil spray
1 3/4 cups rolled oats
1/2 cup chopped pecans
1/2 cup slivered almonds
1/2 cup maple syrup or agave syrup
1/4 cup firmly packed brown sugar
1/4 cup creamy peanut butter
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups puffed rice cereal
1/4 cup flaxseed meal (ground flaxseed)
Handful chocolate chips
Method:
Preheat oven to 350F. Coat 9x13 inch baking pan with oil spray
On baking sheet combine oats, pecans, and almonds. Toast in oven for 5-7 minutes or until lightly brown
Combine maple syrup/ agave syrup, brown sugar, and peanut butter in saucepan and bring to boil over medium heat. Cook for 4-5 minutes, while stirring, until mixture thickens. Stir in vanilla and salt
When oat mixture is toasted, place in mixing bowl and add the rice cereal and flaxseed meal. Add syrup mixture and stir to combine. Spread the mixture into prepared baking pan and chill in refrigerator for at least one hour before cutting into bars. Serve at room temperature.
