Miso #Ramen: cook plain ramen noodles according to package and set aside. Meanwhile, bring 5 cups water and 1/4 teaspoon sea salt to boil. Add chopped and julienned carrot (from 1 large carrot), 1 tablespoon chopped fresh ginger, 8 small shiitake mushrooms (chopped). Simmer for 7-10 minutes (or until carrots and mushroom are tender).


Add 1 cup frozen peas, and handful of chopped nori sheets and simmer low for a few minutes. Remove from heat and add 1-2 tablespoons chopped green onion and 1-2 tablespoons tamari or coconut aminos (sweeter). In a small bowl, mix together 1-2 tablespoon miso (more/less depending on your taste buds preference) with 1/4 cup water until combined. Pour this into soup pot along with the ramen noodles you previously set aside. Taste, adjust seasoning and #enjoy!
