It's gloomy & cold here in NorCal and craved some pasta, so here it is!

Cajun Alfredo Sauce
4 T unsalted butter
2 cloves of garlic, finely chopped
5 oz full fat cream cheese
2 cups of whole milk
5.5 oz freshly grated parmesan
Salt & Pepper to taste

Melt the butter in your sauce pan over low to medium heat. Add the garlic and cook for 2 minutes or until fragrant. Add the cream cheese and whisk until melted in. It's not going to look completely blended in with the butter, so no worries! Add half a cup of milk and stir until incorporated. Keep adding 1/2 a cup and whisking after each addition. Once the mixture starts to simmer, add the cheese and whisk until it's all incorporated. Next, add your spices. It'll be runny, but unless you plan on eating right away, just add more parmesan to desired thickness and adjust seasonings to taste again. I usually make this in advance and it thickens up nicely until I'm ready to serve it. Ladle some over your favorite pasta and your protein of choice! Makes about 3.5 cups.
