MISO MARINATED SALMON SIDE

INGREDIENTS
1 salmon side, skin on (2lb/1kg)
Marinade:
5 tbsp miso
2 tbsp sugar
1 2/3 tbsp sake
1 2/3 tbsp mirin
.
DIRECTIONS
1 Mix marinade ingredients together
2 Slather half on the skin side. Place onto cling wrap and slather flesh side with remaining marinade.
3 Wrap and marinade for 24 to 48 hours.
4 Bring to room temperature. Cook on low BBQ skin side down for 3 minutes, then turn and cook the flesh side for 1 1/2 minutes. Rest for 5 minutes, covered with foil.
5 Serve, garnished with sesame seeds and finely sliced scallions.
