#RECIPE: Mushroom ragu... sauté 1 lb of chanterelles, 1 portobello, one sprig each of rosemary and thyme, 4 cloves of garlic, and 2 shallots with olive oil and a knob of butter. Add 1/2 cup of #cremefraiche and 1/2 cup of white wine and let the #mushroom mixture. Simmer for about 40 min until volume reduces. Season with salt and pepper to taste.
POLENTA: in a heavy sauce pan, add half a cup of polenta, 1.5 cups of water and 1 cup of milk and let it simmer on low heat over 30 min until softened. Season with salt and pepper to taste. Stir in a tablespoon of truffle oil and 1/4 cup of Parmesan when ready to serve. Divide the polenta between 4 bowls, top with mushroom ragu, more #Parmesan if you like, and garnish with chopped parsley. #Enjoy
