First try on double fermented Pumpernickel from Tartine no. 3 book. It's an amazing and clever formula with 50% of prefermented rye chops and blackstrap molasses. By accident I took whole spelt flour instead of whole wheat to substitute whole extraction flour. Next time I'll try to make this bread exactly like in @tartinebaker formula and method, so it turned out lighter. Meanwhile I'm enjoying its amazingly rich flavor and delicate and moist crumb. #flavorbomb #pumpernikel #tartineno3 #wbd2015
