Tonight's dindin: ⭐️For Mama- Quick stewed chicken breast chunks boneless skinless browned, peppers onions, fennel, celery, wine, tomatoes (top left) ⭐️For us- browned chicken thighs, fresh crimini mushrooms browned, then celery, shallots, garlic, thyme, sage,
tomato paste, white wine. Puff up dry porcini in chicken stock add porcini/stock with chicken back to pan and simmer. (Right) ⭐️Great method quick cook slow cook polenta: 3 cups stock- boil, mix 1 cup polenta with 1 cup water, s & p, nutmeg. Add polenta, turn heat to low, stir 15 min. We added 6 oz tallegio and parm at end. Yum. (Bottom left)
