30-minute shrimp and kale fettuccine with bacon in a cauliflower cream sauce

Ingredients (4 servings):
For the cauliflower cream sauce:
3 heaping cups cauliflower florets
4 large garlic cloves
1 yellow onion, sliced thin
2 cups almond milk
Olive oil, as desired
Crushed red pepper, to taste
Salt and black pepper, to taste
Other ingredients:
1 lb wild caught shrimp, shells removed and deveined
4 slices natural bacon, diced small
3 cups kale, chopped
1 package brown rice fettuccine noodles
Fresh minced parsley, to top
Directions: Boil the cauliflower a few minutes until it's softened. In a pan sauté the garlic, onions and olive oil until lightly browned and softened. In a food processor or blender mix together the boiled cauliflower, sautéed onions & garlic and add in 1/2 the almond milk and blend on high then slowly pour in the remaining almond milk until the sauce is completely smooth. Add in seasonings to taste. In a pan sauté the bacon and shrimp in olive oil adding in salt and pepper as desired then add in the kale and sauté until it's wilted and the bacon is crispy and the shrimp is cooked. Boil your noodles then toss together the al dente noodles with the cauliflower sauce, shrimp, kale and bacon. Top with fresh parsley and additional red pepper if desired. Enjoy!?
