Today's dinner: Miso eggplant and Tsukune (with lotus root and too much negi). .

Omgggggg FINALLY my eggplant turned out purple ?. No matter how I cooked it it always turned an unappetizingly ugly brown. Tried steaming it/soaking it with hot water/soaking it in lemon water/microwave it/applying a layer of oil and cling-wrap it then microwave/air frying it on high heat... The only thing I didn't want to try is blanching it with oil because... What a waste of oil right. And watch the calories!! .
Today I tried to grill it with minimal oil on high heat and it sort of worked! Pretty purple. But I'm sure I have tried it before and today is just kind of plain luck.

Any tips to share? How did you keep your eggplant/brinjal/aubergine/nasu bright purple? ??? .
