By @TheGourmetPeasant Ingredients: 1 (28oz) bag of tater tots ½ teaspoon season salt ½ teaspoon garlic powder 1½ tablespoons olive oil 1 pound extra lean ground beef, turkey or pork 1 large onion, diced 2 tablespoons minced garlic (from a jar) 1 teaspoon sea salt 1 teaspoon black pepper 2 teaspoons granulated garlic 2 tablespoons chili powder 1 tablespoon paprika powder 2 teaspoons cumin 1 can diced tomatoes, partially drained ¼ cup chopped cilantro (amount after chopping), plus more for garnish 1 cup shredded cheddar cheese Method: Bake the tots according to package directions until crispy. Season with the season salt and garlic powder. Meanwhile: In a large nonstick skillet, heat the olive oil over medium-high heat and add in the ground meat and onions. Sauté until the meat is no longer pink and the onions start to soften, about 5-8 minutes. Add in the garlic and sauté for 1 minute. Reduce the heat to medium-low and stir in all of the dry seasonings and mix well. Cook for 2 minutes, then add in the diced tomatoes. Taste and adjust flavors, if needed. Remove from heat and stir in the cilantro. When the tots are crispy, pour into a large baking dish, top with the meat mixture, and then top with cheddar cheese. Place the pan back into the warm oven and bake for 3-6 minutes, or until the cheese is melted and bubbly. Top with more cilantro, if desired.
