Yesterday I made this gluten-free pink amazeballs vanilla cake with buttercream frosting. I'm not gluten free but the bday girl @pariscarney isssss. Still cleaning up sprinkles but I think it's worth it! #OCrecipes
Cake:
1/4 cup Coconut Flour
2 3/4 cup all purpose gluten free flour
1 2/3 cup granulated sugar
1 tablespoon Gluten free Baking Powder
3/4 teaspoon salt
3/4 cup (12 tablespoons) softened salted butter
1/2 cup vegetable oil
8 egg whites
1 1/4 cups milk
2 teaspoons gluten free vanilla extract
Preheat oven to 350ºF
Mix the flours, sugar, baking powder, and salt on low speed for a minute to fluff them up. Add the butter and oil
Add the egg whites one at a time
Add the milk and vanilla a little at a time and then beat on high speed for two minutes.
Bake for about 20 minutes or until a toothpick comes out clean.
Frosting: (I doubled this recipe)
4 cups powdered sugar
5 tablespoons Half and half
1 teaspoon vanilla
1/2 lb. (equal to 1 cup or 2 sticks) slightly softened butter
Pink Food Coloring
Combine the sugar, milk, and vanilla. Mix until smooth. Cut the butter into chunks and beat in a handful at a time and continue mixing until fluffy
