Wanted to give a shout out to our Tokyo kitchen team. We have lots of great cooks who have trained since young (just like I did) and spent years abroad in Europe. Many took pay cuts from high end hotels to work in our stand alone store. We all believe in a more creative approach to pastry and a professional and supportive kitchen. We all get excited seeing the guests smile and enjoy our food. And that's why many of us have been here for 20 hours a day. We've passed the toughest part, team. Gambate #dabtokyo #dabjapan ??✊!!
